•1 Purple onion sliced •1 Zucchini, unpeeled and sliced •2 Small yellow squash, unpeeled and sliced •1 Red bell pepper, cut into strips •Salt to taste •Black Pepper •Garlic Powder •¼ Cup oil
Preheat oven to 375° F.
Spread vegetables on a Palisades Parchment Paper. Sprinkle with salt, pepper and garlic powder, drizzle oil. Cover and bake for 18 minutes. Uncover and bake for an additional 10 minutes.
If using En Papillote cooking method mix all ingredients in a bowl. Divide vegetables in 4 and wrap in 4 separate parchment papers. Place in oven for 15 minutes on 350°F. Tear open carefully.
