Ingredients:
8 eggs
2 cups sugar
¾ cup oil
2 tsp. coffee, dissolved in ¼ cup water
¾ cup orange juice
1 cup honey
1 tsp. orange extract or rind of 1 orange
2 T. vanilla sugar
1 tsp. baking soda
1 tsp. baking powder
4 cups flour
Directions:
Beat eggs with sugar until fluffy. Add all liquids. Mix well. Add dry ingredients. Pour batter into muffin tins lined with Palisades cupcake cups. Bake at 350 for 25 minutes.
Yield: 48 cupcakes
