That is why parchment paper matters so much for Rosh Hashanah baking. Honey gives cookies their deep flavor and golden color, but it can also make the dough sticky. A good sheet of parchment helps the cookies bake evenly, release cleanly, and keep their beautiful shape from oven to platter.

Soft honey cookie recipe for Rosh Hashanah


This recipe gives you cookies that are tender, lightly spiced, and full of honey flavor. The dough is easy to mix, and the cookies bake quickly.


Ingredients


  • 6 ½ C Flour

  • 6 Eggs

  • ¾ C oil

  • ¾ TBSP Baking Powder

  • ½ TBSP Baking Soda

  • 3 TBSP Vanilla Sugar

  • 3 ½ C Honey

  • 1 ½ C Sugar

  1. Mix: Place all ingredients in a bowl and mix gently until everything is incorporated and you have a smooth, sticky dough.

  2. Refrigerate: Refrigerate the dough for 1 hour or longer.

  3. Shape: Make small balls by hand or use a scoop to place the dough onto a sheet pan lined with Palisades Parchment Paper.

  4. Bake: Bake at 350°F for 15–18 minutes, or until the cookies are golden and baked through.





Using parchment paper helps in three ways.


It prevents sticking.  

Honey cookie dough can bake into the pan if it sits directly on metal. Parchment helps the bottom stay intact.


It supports even baking.  

A lined baking sheet gives the cookies a more consistent surface. That helps reduce dark spots on the bottom.


It makes transfer easier.  

Once the cookies cool for a few minutes, they slide off with a spatula. No scraping. No breaking. No lost edges.


For best results, place the parchment paper flat on the baking sheet before adding the cookie dough. If the paper curls, press it down with your hands or place a dab of dough under each corner to help hold it in place.


Do not grease the parchment for this recipe. The dough already has enough fat, and extra grease can make the cookies spread more than you want.
